When hot quickly sear the lamb on both sides until golden brown. Place the pan, with the steaks, in the oven and cook for 10 minutes. 3 Heat a deep saucepan with two cups of vegetable oil. Cut the sweet potato into cubes and deep-fry in the vegetable oil, keeping the oil hot for later use. Roughly chop 12 apricots and put in the saucepan. Finely cut the shallots into rings. Add half the packet of raisins, shallots, turmeric, white wine vinegar, ¼ cup olive oil, salt, pepper and sugar. Cook for five minutes or until soft, stirring all the time. 5 For the tempura batter with broccoli: Cut broccoli into florets, removing the stalks. Beat the egg white until fluffy. Cook the florets in hot oil until crispy. Then cut the broccoli stalks into slivers. In another heavy skillet heat oil with slivers of broccoli stalks. 7 Using the same pan that the lamb was cooked in deglaze the lamb juices with white wine and reduce. Add to the apricot, raisin and shallot mixture. 8 Serve the sweet potato cubes with the lamb fillets and broccoli florets with the apricots and raisins.
