Method 1 Pour the boiling water into a large bowl and add the dehydrated potato. Stir until thick, add the cream and stir again. Beat in the eggs well, add the flour and whisk again. Wait about two minutes, until a brown rim forms and then put under a grill for 10 minutes until golden. 3 Open the tin of corned beef and cut into four thick slices. Then dredge in the flour, season with pepper and dip in the egg and breadcrumbs. 4 Heat another frying pan until hot, add the oil and fry the corned beef until golden on each side. Mix all the ingredients except the water in a small bowl. Add the boiling water and blitz with an electric hand blender. 6 To serve: turn the pancake out onto a chopping board, cut into quarters and place one quarter on each plate. Dress the rocket, if using, with oil and seasoning and place on top of the potato pancake. Cut each corned beef fritter in half and arrange on top, finished with a drizzle of the sauce.
