P616 CEEFAX 616 Thu 31 Jan 21:08/03    1/7 POTATO PIE WITH SPINACH AND MUSHROOMS (Serves 4 as main meal/6-8 as starter) 450g/1lb potatoes; 50g/2oz butter; 50g/2oz flour; 450g/1lb spinach; 1 tsp oil; 225g/8oz mushrooms, sliced; 1 egg, beaten; 1 large garlic clove, chopped; 100ml/4fl oz single cream; ¼tsp grated nutmeg; 25g/1oz Gruyere or Cheddar cheese, grated; seasoning. Preheat oven to 190c/375F/Gas 5. Boil potatoes in salted water until soft, drain and mash with butter and flour. Wash the spinach - remove thick stalks. Put in pan with a sprinkling of salt, cover and cook for five mins. Drain - removj water by squeezing between two plates or palms of hands. Chop roughly. Heat oil. Fry mushrooms and garlic. Transfer cooked mushrooms to potato base. Cover evenly with spinach. Mix cream, egg, nutmeg and seasoning together and pour of pie. Spinkle with grated cheese. P616 CEEFAX 616 Thu 31 Jan 21:57/38    3/7 GRATIN OF LEEKS (Serves 4 as an accompaniment) 225g/8oz young leeks, trimmed and washed; 40g/1½oz butter; 2 tbsp plain flour; ½tsp English mustard powder; 50ml/2fl oz single cream; 150ml/¼ pint milk; pinch of grated nutmeg; 25g/1oz cheese, grated; seasoning. Cut leeks into 1" lengths. Cook until tender in boiling salted water. Drain. Melt butter in pan, stir in flour and mustard powder. Cook for one minute then add cream and milk. Meanwhile, roast the cashew nuts until golden, either in the over or in a dry frying pan over a low heat. Take a few of the cashews, crush them coarsely and mix with breadcrumbs. Drain carrots and blend until smooth in a food processor with the fromage frais Stir in whole cashew nuts and seasoning Spoon into an ovenproof dish.
