Method: Put in a blender and blend until smooth. Serve in tall glasses. Sprinkle with cinnamon. P686 CEEFAX 686 Thu 13 Jan 21:56/18  3/9    BEEF STIFADO (serves 4) Ingredients: 1 tbsp olive oil; 1kg/2lb shin or leg of beef, trimmed of excess fat 225g/8oz onions, chopped; 2 garlic cloves, crushed; 225g/8oz can of tomatoes; 2 tbsp tomato puree; juice of 1 lemon; 1 tbsp freeze- dried oregano; pinch of freeze- dried thyme; 1 tsp sugar;seasoning; tarragon sprigs, to garnish. Cut meat into 2.5cm/1" cubes and fry until lightly browned. Add the onions and garlic and fry until golden brown. Add the tomatoes, tomato puree, lemon juice, oregano, thyme and sugar with a little seasoning (you can adjust seasoning when cooked) and enough water to come half-way up the beef. Add the fish and stir fry for another couple of minutes.   Add the wine and the squashed tomatoes. Cook gently for 20 mins.
