P686 CEEFAX 686 Fri 26 Feb 21:18/15  4/6    LEMON MERINGUE PIE (serves 6)   Ingredients: 350g/12oz ready-made shortcrust pastry; grated rind and juice of three lemons; 4 tbsp of cornflour; salt; 225g/8oz caster sugar; 1 tbsp softened butter; 4 eggs, separated. Method: Preheat the oven to 190c/ 375f/gas 5. P686 CEEFAX 686 Fri 26 Feb 21:20/44  5/6    LEMON MERINGUE PIE Method (contd): Line the pastry case with greaseproof paper, then fill with baking beans and bake blind for 10 mins until lightly browned at the edges. Remove paper and beans and leave to cool. Blend together the lemon juice and cornflour to a paste in a pan. Stir in 300ml/½ pint of water, pinch of salt and half of the sugar.   Bring mixture slowly to boil, whisking all the time, until thick and clear. Beat the egg yolks into the lemon mixture and pour into pastry case. Whisk the egg whites until very stiff then whisk in the remaining sugar and a pinch of salt. Completely cover the lemon filling with the meringue and fork it into soft peaks.
