P686 CEEFAX 686 Fri 5 Mar 21:11/02  6/10    RABBIT WITH PRUNES AND MUSTARD (serves 4)   Ingredients: 675g/1½lb rabbit pieces; 1 tbsp plain flour; 1 tbsp each vegetable oil and butter, softened.   1 onion, finely chopped; 175g/6oz ready-to-eat dried prunes; 100g/4oz fromage frais; 1 tbsp Dijon mustard; seasoning. P686 CEEFAX 686 Fri 5 Mar 21:12/39    RABBIT WITH PRUNES AND MUSTARD Method (cont.): Heat the oil and butter in a large pan and fry the rabbit until golden brown all over. Add onion and prunes to pan and pour over just enough water to cover. Season generously and simmer for 45 mins until rabbit is tender. Remove rabbit with a slotted spoon and keep warm. Stir the fromage frais and mustard into the pan and simmer until reduced slightly. Fry some finely chopped onions in butter. In another dish, mix some mashed potatoes and some skinned cod/haddock. Add the fried onion and two raw  eggs and beat together. Season with some flour with salt and pepper. Roll mixture into balls and roll in flour.
