Shred the cabbage leaves and quickly blanch for one minute in hot salted water. 3 Make a dressing by mixing the olive oil, balsamic vinegar and grainy mustard together. Serve the cooked gammon steaks on top of the potato and cabbage salad, garnished with hard boiled eggs cut in half. Cook the greens in butter with thyme, garlic and onion. Slice half of the gammon steak and add to the onions and greens. 5 Add the pease pudding, salt and black pepper. Cut the top of the tomatoes off and scoop out the seeds inside. Stuff with the cooked onion and greens mixture, leaving about half.Roast the tomatoes in a hot oven for 10 minutes. Flatten the mixture and cook for about eight minutes until golden. 9 When the bubble and squeak is cooked remove from the pan, and in the same pan fry the eggs. Top the bubble and squeak pancake with the fried egg. 10 For the pease pudding sandwich: Spread some pease pudding onto thick slices of white bread, butter the outside and char-grill in a griddle pan.
