Mix together the mustard and lemon juice, brush over the venison and roll in the oatmeal. Place on a baking sheet and cook for about 10-15 minutes or until cooked to taste. 3 Place the wine and orange juice in a medium saucepan and simmer until reduced by half. Heat a small wok, add 2 tbsp water and steam-fry the beans for two minutes or until tender. Add the orange zest and stir. Remove the venison steak from the oven and slice thickly. 5 Place a 4cm metal cutter onto a serving plate and fill with the mashed potatoes. Remove the cutter, place the venison slices on top and pour over the wine sauce. 6 For the biscuits, preheat the oven to 180c/350f/Gas 4 and grease a baking sheet. Add the water and egg and knead lightly. Then place walnut-sized balls of the mixture onto the greased baking sheet. Flatten to a 1cm thickness and bake for 10-15 minutes or until golden. 8 For the Cranachan bake the oatmeal on an ungreased baking sheet for about five minutes or until golden. Cool, whip the cream and stir in the whisky, toasted oatmeal and honey. Spoon into tall glasses and serve with biscuits.
